    crumbled blue cheese (1/3 cup), plus more for topping

Cauliflower

  • 1/2 c.

    rice flour

  • 1/4 c.

    cornstarch

  • 1/4 tsp.

    baking powder

  • 1/4 tsp.

    kosher salt

  • 1/2 c.

    plus 2 tablespoons cold seltzer

  • 1

    2-pound head cauliflower, trimmed and cut into 1 1/2-inch florets (about 7 cups)

  • Canola oil, for brushing

  • Cucumber spears and/or celery sticks, for serving
